Winemaking Notes:

We enjoyed perfect harvesting conditions and picked the immaculate fruit for the Winmark 2021 Single Vineyard in the cool of the morning, which we gently pressed to ensure absolute freshness. 

We fermented the free run juice and matured the resultant wine in fine grained French Oak for 11 months. Finally, we gently racked and bottled the wine to ensure that we captured the essence of the vineyard.

This wine is pure and inviting from the wonderful lemon colour to the fine and persistent finish. The youthful flavours of white stone fruits and nashi pear supported with soft spices are a delight. However, the journey is only beginning as the wine will evolve beautifully with the benefit of cellaring to reveal layers of toastiness, richness and depth. It will age gracefully yet never lose form.
