Fruit selection and maturity are essential for crafting a distinguished Méthode Traditionelle. By monitoring the fruit daily as it ripens, we identify the perfect harvest window. This optimal window spans just a few days.
After harvesting, we gently press the fruit and select only the “first cut” to ensure the purest base wine. This is fermented in stainless steel, preserving its fresh, vibrant flavours.
Once primary fermentation and malolactic fermentation are complete, we proceed with blending and then tirage. After a minimum of eighteen months ageing on lees in bottle, this elegant yet subtle base wine evolves into a complex and refined Méthode Traditionnelle. We disgorge with minimal dosage, allowing the wine’s natural structure and finesse to shine – celebrating the sparkling expression of Winmark Estate Chardonnay.
TASTING NOTES
Pale straw with a fine, persistent bead. Floral aromas with notes of citrus and stone fruits. Crisp primary fruit flavours of grapefruit, white peach and nectarine are complemented by secondary notes of almonds and beeswax, with lovely complexity and texture. Clean and fresh with a very fine line of acidity.
