The chicken is braised in the wine with aromatic vegetables such as onions, garlic, and mushrooms, which infuse the meat with a delicate, rich taste. Coq au vin blanc 
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4-5 strips of chopped bacon
  • 6 minced garlic cloves
  • 4 pieces chicken maryland
  • 250 g (2 cups) mushrooms, whole or halved
  • 500 mL Winmark 2022 Single Vineyard Reserve Chardonnay
  • 250 mL (1 cup) cream
  • Salt and pepper to taste
  • Handful of chopped flat-leaf parsley
Instructions:
  1. Season and Brown the Chicken: Begin by seasoning the chicken pieces with salt and pepper. In a large pan, cook the chicken in the rendered bacon fat over medium-high heat until each side is browned. Once browned, transfer the chicken to a plate and set aside.
  2. Cook the Bacon: In the same pan, add a tablespoon of olive oil (unless the bacon is particularly fatty, in which case, skip the oil). Cook the chopped bacon until it’s crispy and golden.
  3. Sauté the Onions and Garlic: Reduce the heat to low and add the diced onion to the pan. Cook for 5-7 minutes, until the onion becomes tender and translucent. Then, add the minced garlic and cook for an additional minute, allowing the flavours to meld.
  1. Brown the Mushrooms: Increase the heat to medium-high and add the mushrooms to the pan. Brown them for 3-5 minutes, stirring occasionally. This step enhances the mushrooms’ natural flavours and adds a lovely texture to the dish.
  2. Simmer with Chardonnay: Return the browned chicken to the pan and pour in the Winmark 2022 Single Vineyard Reserve Chardonnay. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 40 minutes. This slow cooking allows the chicken to absorb the Chardonnay’s exquisite flavours, resulting in a tender and flavourful dish.
